  • 3 lbs squash - yellow or green sliced extra thin
  • 1/2 cup onions chopped
  • 3 eggs beaten
  • 1/2 cup almond flour
  • 8 oz butter
  • 1/2 tbsp Swerve optional
  • 1 tsp Himalayan salt
  • 1 tsp black pepper
  • 4 oz grated mozzarella


  1. Slice squash extra thin with mandolin

  2. Place in bowl with onions, eggs, almond flour, butter, Swerve, salt and pepper.

  3. Place in greased casserole dish (use coconut oil or butter).

    Top with grated cheese

  4. Bake in 350 oven for one hour.
