Ingredients

  • 8 Oz Salami sliced thin
  • 2 Extra large eggs
  • 1 Large Vidalia onion
  • 2 Tbs coconut oil or butter
  • 1 Tsp Pink Himalayan Salt
  • 1/2 Tsp ground black pepper
  • 1 Tsp ground Oregeno

Instructions

  1. Using an indoor grill or heavy skillet grill onion chopped into fine slivered slices in 2 tbs coconut oil or butter
  2. Add salami slices around skillet and brown on each side on top of the onions
  3. Add eggs cracked over salami and sprinkle salt, pepper and oregeno all over the top
  4. Cover and cook on low for 3-5 minutes depending if you prefer the eggs runny or cooked through
  5. Serve with mustard on the side
  6. Garnish with greens
