Ingredients

  • 4 chicken breasts boneless, skinless
  • 3 cup frozen blueberries
  • 1/4 cup no sugar added ketchup or Keto Homemade Ketchup
  • 2 tsp crushed red pepper
  • 1 tsp swerve
  • 1/2 onion chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 Tbsp fresh ginger
  • 1 tsp lemon juice
  • 1 tsp mustard

Instructions

  1. Preheat oven to 450 degrees. Once it reaches 450, put the chicken in for 15-18 minutes. About 5 minutes before taking chicken out, sprinkle cheese over chicken.

  2. While chicken is roasting, combine all the other ingredients in a sauce pan and bring to a boil. Reduce sauce until it gets thicker which should be about 15 minutes.

  3. When both chicken and sauce are ready, pour sauce over chicken.
