Ingredients

  • 3 Medium zucchini
  • 2 Garlic cloves minced
  • 15 oz Cans tuna 3 cans of 5 oz each (or salmon)
  • 2 Tbs Primal Kitchen Mayonnaise
  • 2 Tsp celery salt
  • Black pepper to taste
  • 6 Oz shredded Mozzarella cheese
  • 2 Oz Parmesan cheese
  • 2 Oz shredded Cheddar cheese
  • 2 Tbs butter
  • 1/4 cup fresh parsley
  • 1 pint cherry tomatoes

Instructions

  1. Preheat oven to 350
  2. Cut zucchini in half lengthwise
  3. Remove all seeds carefully not to break the zucchini using a small spoon or melon scooper
  4. Grease oven safe pan with butter
  5. Place zucchini halves into the pan open side up
  6. Bake for 20 minutes
  7. In a medium sized bowl add tuna or salmon, celery salt, black pepper, cheddar cheese, garlic and mayo & mix well
  8. Remove zucchini from oven and spoon tuna or salmon mix into the logs
  9. Sprinkle mozzarella cheese over each log
  10. Bake in oven 15 minutes or until golden
  11. Remove from oven and sprinkle parmesan cheese over
  12. Garnish with parsley
  13. Serve with cherry tomatoes on the side
