Ingredients

  • 16 oz bag riced cauliflower
  • 1 Tbsp olive oil
  • 1/2 yellow onion diced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 cup tomato sauce
  • juice of one lime
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • sliced jalapeno and cilantro for serving

Instructions

  1. Heat the olive oil in a large skillet over medium high heat. Add the onion and garlic and cook until fragrant.

  2. Add the cauliflower rice, chili powder and cumin and toss well.

  3. Add the tomato sauce, stir and cook until the cauliflower rice is tender, about 5 minutes.

  4. Add the lime juice, salt and pepper and stir. Serve with sliced jalapeno and fresh cilantro.
