Completely Keto Creamy Mashed Cauliflower

  • 1 head cauliflower
  • 6 Tbs heavy cream
  • 3 Tbs butter
  • 4 Tbs sour cream
  • 1/4 Tsp black pepper
  • 1 Tbs freshly chopped chives
  • 1 Tsp Pink Himalayan salt
  • 1/2 Tsp minced garlic
  1. Wash & cut up cauliflower into 1/4 pieces
  2. Cook in a small pan with 1 cup water until tender
  3. Drain well
  4. Using a food processor place cauliflower, cream, butter, sour cream, salt, pepper & minced garlic
  5. Pulse until smooth & creamy
  6. Serve hot in a bowl and garnish with chives and a slice of butter
