Ingredients

  • 8 Zucchini

Chunky Tomato Sauce:

  • 1 Large onion chopped very small
  • 6 Cloves garlic minced
  • 1/4 Tsp smoked paprika
  • 3 Tomatoes chopped up in small cubes chopped up in small cubes
  • 1 bunch fresh basil finely chopped
  • 12 oz tomato paste no sugar added
  • 1 Cup water
  • 2 Tsp Swerve
  • 1 Tbs Pink Himalayan Salt
  • 2 Tsp black pepper
  • 5 Tbs olive oil mild

Instructions

  1. Wash and dry zucchini
  2. Using a Zoodle Maker, create any size zoodle you prefer and set aside
  3. In a medium-size saucepan saute onions for 5 minutes in olive oil on medium-high
  4. Reduce heat to medium-low
  5. Add minced garlic and stir 2 minutes
  6. Toss in cubed tomatoes and cook 5 more minutes
  7. Pour tomato paste, water and swerve into the pan and stir while cooking 2 more minutes
  8. Add basil, paprika, pepper, and salt and cook for 10 minutes covered
  9. Keep Warm until ready to serve
  10. Heat up the Zoodles for 45 seconds in a microwave safe plate
  11. Serve the sauce warm over Zoodles and enjoy!
