Keto Avocado Chocolate Mousse
Ingredients:
- 2 ripe avocados
- 1/4 cup unsweetened cocoa powder
- 1/4 cup unsweetened coconut or almond milk
- 1/2-1 tablespoons stevia (to taste)
- 1 teaspoon vanilla extract
- A pinch of salt
- Fresh raspberries or strawberries for topping
- fresh mint leaf to garnish
- shaved Lilly’s (stevia only) dark chocolate for topping.
Instructions:
- Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop the flesh into a blender or food processor.
- Blend Ingredients: Add the cocoa powder, coconut (or almond) milk, stevia, vanilla extract, and a pinch of salt to the blender. Blend until smooth and creamy. Taste and adjust the sweetness if necessary by adding more stevia.
- Chill: Transfer the mousse to individual serving bowls or cups. Refrigerate for at least 30 minutes to allow the flavors to meld and the mousse to firm up a bit.
- Serve: Top with fresh raspberries or strawberries and a sprinkle of shaved chocolate and a fresh mint leaf?
