Cristina Wooley’s Completely Keto Ice Cream Sandwiches

 

Ingredients:

4 Eggs

3 Tsp baking powder

1 Cup almond flour

4 Tbs Cocoa

1/2 Cup melted butter

1/4 Cup Sweetener of choice

 

 

1 Tsp vanilla extract

1 Cup heavy whipping cream

Pinch of sweetener




Mix like a cake batter, and put 3 Tbs of mixture in a microwave safe small container, microwave 120 seconds

Put on rack to cool

Repeat until you have 8 ”cakes”

 

In a bowl whip 1 Tsp vanilla extract and 1 cup heavy whipping cream and a pinch of sweetener

Put in piping bag with any large opening tip

 

When cakes are fully cooled rip off about a 4 inch section of wax paper and place on a plate

Use bread knife to slice cake in half and lay flat

Squeeze pipe filling onto the cake and top with the other half

Wrap in wax paper and put in ziploc baggy to freeze

Freeze 2 hours
