Completely Keto Spicy Eggplant

  • 1 eggplant 1 Large or 2 medium
  • 1/2 Cup olive oil
  • 2 Tsp cayenne pepper
  • 1 Tsp cumin
  • 1 1/2 Tsp Pink Himalayan Salt
  • 6 cloves Garlic minced finely


  1. Turn on the broiler on your oven setting
  2. Rinse eggplant
  3. Slice in thin large round circles
  4. Place on heavy aluminum foil sheet or large baking tray
  5. Lay eggplant circles all around on sheet
  6. Use a baking brush, dip into olive oil and spread oil on each circle evenly
  7. Place in broiler
  8. Check broiler after 2 minutes
  9. The eggplant should be slightly golden and cooked on one side
  10. Turn over using a large fork
  11. Broil on other side until golden and cooked
  12. Remove and place on counter
  13. Mix all spices in a cup
  14. Use the baking brush to dip into the spice mixture
  15. Spread mixture evenly over each slice
  16. Place all eggplant slices into a glass pyrex container to preserve flavors
  17. Store in refrigerator up to 3 days
  18. Serve warm, cold or at room temperature
  19. This dish is great with hamburgers and other proteins, and adds some real kick & burst of flavors to your meal
