Completely Keto Tempura Chicken

Ingredients

  • 6 boneless chicken breasts cut into chunks
  • 4 eggs
  • 3 tsp xanthan gum
  • 1/4 tsp Pink Himalayan Salt
  • 1/4 cup avocado oil to fry
  • pinch of black pepper
  • 1/4 cup Extra virgin olive oil for batter
  • 1/4 tsp basil

Instructions

  1. Heat up the avocao oil in a large frying pan.

  2. Combine all the other ingredients except for the frying oil and chicken in a small bowl to form a batter.

  3. Coat each chunk of chicken individually in the batter.

  4. Fry each chunk for 3 minutes per side or until it reaches a nice light brown.

  5. When ready set onto a layer of paper towel. Best served hot and with one of Harlan's amazing keto dipping sauces. There is many to choose from.
