Ingredients

Marinade

  • 1/4 cup olive oil
  • 2 Tbsp balsamic vinegar
  • 2 garlic cloves minced
  • 1/2 tsp salt
  • 1/4 tsp pepper

Chicken

  • 1 lb boneless skinless chicken breasts
  • 8 oz mozzarella cheese sliced
  • 1 large tomato
  • chopped fresh basil

Instructions

  1. Stir together the ingredients for the marinade in a small bowl.

  2. Butterfly the chicken breasts and place them in a large ziplock back with the dressing. Toss well and marinate in the refrigerator for at least 2 hours.

  3. Grill the chicken on high heat for about 5 minutes per side or until cooked through.

  4. Layer mozzarella and tomato slices on top and cook on low for 2-3 minutes more until the cheese is melted.

  5. Top with fresh basil and drizzle with balsamic if desired.
