Using a large bowl combine eggs, mustard, salt and pepper and mix

Toss chicken breasts inside the mix and let sit for a few minutes

Using a large flat plate with the almond meal, dip one piece of chicken at a time on each side

Heat up oil in fryer

Place in the fryer until lightly golden

Serve on a bed of greens or a fresh salad
