Ingredients

  • 2 Young coconuts
  • 2 Tomato’s
  • 4 Tbs fresh cilantro
  • 1 Tsp cayenne pepper
  • 2 Tsp curry powder
  • 1/2 Tsp Pink Himalayan Salt
  • 8 Garlic cloves
  • 6 Tbs lime juice
  • 4 Tsp fresh ginger minced
  • 4 Tsp cold pressed olive oil
  • Chili red pepper sliced optional
  • Cilantro or basil leaves optional
  • Red bell pepper sliced thin optional
  • Green bell pepper sliced thin optional

Instructions

  1. Drain the coconut and add meat to a high powered blender ( give liquid to a non keto family member)
  2. Add all remaining ingredients and blend on high
  3. Chill in refrigerator for at least a couple of hours before serving
  4. Mix well before serving
