Ingredients

  • 6 Cups turkey chopped & cooked
  • 2 Onions chopped
  • 2 Cups celery chopped
  • 4 Cups cauliflower finely chopped
  • 2 Cups mushrooms fresh chopped
  • 2 Tsp fresh basil finely chopped
  • 1 Tsp Rosemary
  • 2 cloves Garlic smashed
  • 4 Tsp coconut oil or butter
  • 6 Cups chicken broth
  • 2 Cups almond milk unsweetened
  • 1 1/2 Tsp kosher salt
  • 1 Tsp black pepper

Instructions

  1. Using a pot big enough for a soup, saute all vegetables in the basil, garlic, rosemary in oil or butter until lightly golden
  2. Add turkey and broth
  3. Simmer for 20 minutes
  4. Reduce heat to low and add almond milk, salt and pepper
  5. Simmer 30 minutes
  6. Remove from heat and serve garnished with finely chopped basil, dill or parsley
