Ingredients

  • 4 lbs Rack of lamb 2 racks of lamb with about 6 bones each
  • 1 Tsp dry red pepper flakes
  • 3/4 Cup olive oil
  • 1 lemon juice only
  • 8 cloves Garlic Large cloves - finely minced
  • 2 Tbs fresh rosemary fresh, chopped
  • 1 1/2 Tsp Pink Himalayan Salt coarse

Instructions

  1. In a small bowl mix olive oil, garlic, lemon juice, fresh rosemary, red pepper flakes and salt
  2. Using an oven safe porcelain dish, place the rack of lamb side by side with the tips facing up
  3. Pour spice mixture over the rack of lamb
  4. Cover and place in the refrigerator for about 6-8 hours
  5. Preheat oven to 375
  6. Remove lamb from the refrigerator and allow to rest for an hour or so
  7. Roast in oven for 20 minutes
  8. Lower oven temperature to 325 and continue roasting for 45-55 minutes or until lamb looks ready and golden in color
  9. Remove from oven, slice and drizzle juices over when serving
