Set oven to 350 degrees.
Mix all the spice ingredients together well in a bowl.
Coat the whole roast in olive oil, then in the spice rub.
Cook the roast in a pan for medium-high flame. Then place in a baking pan.
Mix the glaze ingredients together and spead over the meat.
Put the roast in middle of the oven and bake uncovered for 45 minutes. Lower the heat to 225 degrees and remove.
Wrap the meat in parchment paper then tin foil and return to oven in the baking pan. Cover with foil in the pan also and return to the oven for 12 hours.
