Harlan Kilstein's Completely Keto Pesto & Cheese Stuffed Chicken Breasts

  • 6 boneless chicken thighs
  • 1/2 cup dry white wine
  • basil to sprinkle on top


  • 3 garlic cloves peeled
  • 1 Tbsp fresh basil
  • 1/4 cup Harlan's Keto Pesto or other keto pesto recipe
  • 1/4 cup marinated artichokes
  • 1/4 cup cheddar or mozzarella cheese


  1. In a food processor blend all the filling ingredients. Keep it chunky.

  2. Put a tablespoon and a half of the blended mix onto each piece of chicken and fold over to secure with toothpick.

  3. Put the rest of the mix over chicken and sprinkle over with basil.

  4. Fill a baking dish with the white wine and put the chicken in. Let it marinate for 60 minutes.

  5. Set oven to 350 degrees and bake uncovered for 45 minutes. At the 20 minute mark pour some of the juices over the chicken.
