Best to remove all bones from the fillets to avoid choking hazards.
Heat the olive oil in a pan and add the lemon zest, juice, raisins.
Top the fish a bit with the salt, black and red pepper.
Add the lemon slices and thyme to the sauce and mix well. Then put the fish fillets on top of the sauce.
Cover the pan and let the fish cook for about 6 minutes or until the fish develops a firm feeling.
