Ingredients

  • 6 Eggs
  • 2 Tbs butter
  • 4 stalks celery chopped into small slices
  • 6 Oz baby spinach
  • 2 Tsp tumeric
  • 1 Tsp cumin
  • 1/2 Tsp Pink Himalayan Salt
  • 1/4 Tsp black pepper

Instructions

  1. Melt butter in a heated skillet
  2. Saute celery slices in skillet
  3. Add all seasonings
  4. Toss for 3-5 minutes on medium-low heat or until desired tenderness is reached
  5. Add Spinach and mix well
  6. Beat eggs
  7. Move vegetable mix to the side of the skillet
  8. Pour beaten eggs on the other side of the skillet
  9. Gently fold vegetable mix onto eggs
  10. Cook covered or uncovered for 2-3 minutes
