All vegetables have carbs. It’s a fact. Keto means choosing your foods eliminating high insulin spiking veggies like potatoes, sweet potatoes, and rutabagas and focusing on lower carbs veggies.  If you want vegetable soup, it’s going to need some flavors.

You can choose to enjoy the broth only from this soup and give the veggies to a non-keto member of your family. My 91 year old mom comes to mind…

Or you can take care and divide up the veggies evenly into portions and keep track of them in your daily count.

Yes, you are reading this recipe correctly. It has carrots, pumpkin, and turnips in them. However, this recipe serves 8. That brings the carb count way down. Enjoy.

Harlan Kilstein’s Keto Simple Vegetable Soup

4 Tbs olive oil

1/4 tsp turmeric

6 smalls onions peeled and cut in halves

1 carrot peeled and cut into chunks

2 turnip peeled and cut into chunks

1/2 cabbage shredded

Whole medium pumpkin cut into chunks  (remove skin)

1/2 bunch of fresh coriander chopped

2 tsp Himalayan salt

Saute onions in olive oil and turmeric for 5 minutes.

Add carrots and saute for another 5 minutes.

Add 3 quarts of water, then vegetables and salt.

Cook for 1/2 an hour, then at the end add the fresh coriander and cook 5 more minutes.

Serves 8

These pots will “bake” the flavor into your soup or stews.
