Harlan Kilstein’s Completely Keto Zoodles And Homemade Tomato Basil Sauce

Ingredients
- 8 Zucchini
Chunky Tomato Sauce:
- 1 Large onion chopped very small
- 6 Cloves garlic minced
- 1/4 Tsp smoked paprika
- 3 Tomatoes chopped up in small cubes chopped up in small cubes
- 1 bunch fresh basil finely chopped
- 12 oz tomato paste no sugar added
- 1 Cup water
- 2 Tsp Swerve
- 1 Tbs Pink Himalayan Salt
- 2 Tsp black pepper
- 5 Tbs olive oil mild
Instructions

Wash and dry zucchini

Using a Zoodle Maker, create any size zoodle you prefer and set aside

In a medium-size saucepan saute onions for 5 minutes in olive oil on medium-high

Reduce heat to medium-low

Add minced garlic and stir 2 minutes

Toss in cubed tomatoes and cook 5 more minutes

Pour tomato paste, water and swerve into the pan and stir while cooking 2 more minutes

Add basil, paprika, pepper, and salt and cook for 10 minutes covered

Keep Warm until ready to serve

Heat up the Zoodles for 45 seconds in a microwave safe plate

Serve the sauce warm over Zoodles and enjoy!
