Harlan Kilstein’s Completely Keto Thai Coconut Curry Soup

 

Ingredients:

 

Serves 4 Bowls of soup

 

2 Young coconuts

2 Tomato’s

4 Tbs fresh cilantro

1  Tsp cayenne pepper

2 Tsp curry powder

1/2 Tsp Pink Himalayan Salt

8 Garlic cloves

6 Tbs lime juice

4 Tsp fresh ginger, minced

4 Tsp cold pressed olive oil

 

Garnish:

Chili red pepper sliced (optional)

Cilantro or basil leaves (optional)

Red bell pepper sliced thin (optional)

Green bell pepper sliced thin (optional)




Drain the coconut and add meat to a high powered blender ( give liquid to a non keto family member)

Add all remaining ingredients and blend on high

Chill in refrigerator for at least a couple of hours before serving

Mix well before serving

Garnish
