Harlan Kilstein’s Completely Keto Shirataki Vegetable Lo Mein

 

Ingredients:

 

2   7  Ounce packages of Shirataki Spaghetti 

1  Carrot chopped into thin slivers, either in a food processor or chopped

1  1/2 Cups shredded red cabbage

3 Oz sliced mushrooms

2  Scallions chopped small

1 Cup string beans cut up

6 Oz broccoli chopped

1/2  Red pepper sliced into thin slivers

1/2  Orange pepper into thin slivers

1  Zucchini chopped into small cubes

 

Seasoning:

5 Tsp Coconut Aminos

2 Tsp Swerve

3 Cloves garlic minced

2 Tsp fresh minced ginger

 

Garnish with:

1/4 Cup fresh chopped parsley




Prepare Shirataki noodles and set aside

Prepare seasoning mix in a small bowl and set aside

Heat up a wok or a saute pan

Saute all vegetables over high heat, for about 2-4 minutes

Add Shirataki noodles and seasoning mixture and stir

Serves 4 Servings
