Ingredients

  • 2 lb chicken legs
  • 2 large onions sliced

Marinade

  • 1/2 cup sweet red wine
  • 2 Tbsp wheat free tamari sauce
  • 1 Tbsp Pink Himalayan Salt
  • 3 garlic cloves minced
  • 1/2 cup no sugar added raspberry or strawberry jam
  • 1 tsp black pepper

Instructions

  1. Mix together all marinade ingredients in a bowl. Marinate the chicken in it, I prefer to marinate using ziploc bags. Marinate for at least 2 hours.

  2. Set oven to 425 degrees.

  3. Prepare a baking pan and put a flat layer of onions. Set chicken on top of the layer and roast the chicken for about 45 minutes.
