Ingredients

Cookies

  • 1/2 cup swerve
  • 2 eggs
  • 1/2 tsp Pink Himalayan Salt
  • 2 cup almond butter (see recipe on our website for homemade keto almond butter) the butter should be soft but cold
  • almond chips or almonds to cover top of each cookie

Optional Glaze (not pictured)

Instructions

Cookies

  1. Mix the swerve sugar, butter, egg and salt in a bowl.

  2. Grease some parchment paper on a baking sheet.

  3. Spoon the batter evenly out for each cookie, ideally using a tablespoon measurer, and form them into nicely shaped balls.

  4. Then press down on each ball using the back of any utensil to flatten. Then top with an almond or cover in almond chips. Put in the oven and bake on 350 for 11 minutes. Allow cookies to cool completely when finished.

Optional Glaze

  1. Mix the swerve confectioners sweetener, water and almond extract well. Then pour as much as you wish on each cookie.
