Harlan Kilstein’s Completely Keto Louisiana Chicken Gumbo

Ingredients
- 2 tbsp olive oil
- 4 chicken thighs skinless, boneless, in pieces
- 4 Italian sausage sliced (no sugar)
- 2 onions diced
- 2 celery stalks
- 1 red pepper diced
- 4 cloves garlic minced
- 1 tsp smokey paprika
- 1/2 tsp Himalayan salt
- 1/4 tsp black pepper
- 1/2 cup Pinot Grigiot or chicken broth
- 8 oz crushed tomatoes
- 1 package frozen okra
- 1 cup chicken broth
- 2 bay leaves
- 1 cup riced cauliflower
Instructions

Put all ingredients in slow cooker.
Turn on high for 30 minutes
Turn to medium or low and cook for an additional 3.5-6 hours.
Discard bay leaves before serving.
