Ingredients

  • 2 Pounds ground lamb
  • 1/2 Cup purple grated onion
  • 5 Cloves minced garlic
  • 1/2 Tsp allspice
  • 1 Tsp ground white pepper
  • 7 Tbs freshly chopped mint leaves
  • 7 Tbs freshly chopped curly parsley
  • 2 1/2 Tsp Pink Himalayan Salt
  • 2 Tsp cumin
  • 5 Tbs olive oil
  • Slice 1 red bell pepper and half an onion to place on the stove top pan grill for flavor
  • You will need a dozen bamboo grilling skewers

Instructions

  1. In a large glass Pyrex bowl mix all Kofta ingredients, not including the olive oil
  2. Using a tray covered with wax paper line up 12 Kofta, shaping them like a small sausage in length and then flattened
  3. Place the bamboo skewer through each Kofta, leaving an even space on each side to use while grilling to flip over
  4. Cover with plastic wrap and place in refrigerator for at least 1 hour or more if needed to prepare ahead of time
  5. While they are in the refrigerator use a blender or food processor to blend all of the garlic sauce ingredients until smooth
  6. Pour in a small airtight jar with a lid and place in the refrigerator as well
  7. Slice the bell pepper and onion to use while grilling
  8. Pour olive oil as needed into a stovetop grill pan to coat the bottom to prevent sticking or breaking apart
  9. Heat pan until medium-high heat
  10. Remove Kofta platter from the refrigerator and place a few in the heated grill pan
  11. Gently place pepper and onion evenly around for added flavor
  12. Allow to cook for 3-5 minutes on each side or until desired
  13. Repeat again until all Kofta are cooked and ready
  14. Serve with garlic sauce on the side
