Harlan Kilstein’s Completely Keto Crispy Eggplant

Ingredients
- 3 tsp xanthan gum
- 3 eggs beaten lightly
- 1/2 tsp garlic powder
- 2 cup ground almonds
- 1 eggplant cut into slices widthwise
- 1/2 tsp Pink Himalayan Salt
- avocado oil for frying
Instructions

Put the xanthan gum, almonds and beaten eggs into 3 different bowls. Season the eggs with salt and garlic powder and mix to combine.

Season the almonds with salt and pepper and mix well.

Coat each eggplant lightly in xanthan gum, then egg then almonds. Let each slice dry a bit before frying.

Heat at least half an inch of oil in a large frying pan. Once the oil is fully heated, start frying the slices for about a minute per side or until a nice brown.

Sprinkle with salt before serving and serve with dipping sauce of your choice.
