Harlan Kilstein’s Completely Keto Chocolate “Happy Birthday” Cake




1 Cup Lakanto Syrup

1 Cup Coconut flour

1 Cup Bulletproof chocolate powder 

1 Cup coconut oil

1 Tsp baking soda

16  Large eggs

1 Tsp Pink Himalayan Salt 



Frosting Ingredients:

1 Cup butter at room temperature
1 Cup Bulletproof chocolate powder
5 Cups Swerve Confectioners sweetener
6 Tbs Unsweetened coconut milk
3 Tsp Rodelle vanilla extract


Chocolate Shavings:

3 Lilly’s Dark Chocolate Bars shaven into bits for decorating the cake all around the sides of the cake

Preheat oven to 350



Using a cake mixer combine all of the dry ingredients

Add the remaining ingredients and mix until creamy

Grease two 9 inch round cake pans 

Pour batter into the two cake pans

Bake between 20-35 minutes ( please watch these cakes as every oven is so different from the other )

Remove from oven after a toothpick is tested in the middle and comes out clean

Allow to cool on cooling racks before frosting




Using mixer cream together the butter and chocolate powder very well

Add the Swerve confectioners and mix well

Add in coconut milk and mix well

Add in vanilla

Mix until fluffy for 3 minutes


Spread frosting in between the two cakes and place one on top of the other

Frost the entire cake all around

With the remaining frosting use this Cake decorating set  to design the top of your birthday cake with swirls and designs that come with the set, choose from the many tips it comes with to perhaps use one type of design, on the edges of the birthday cake and use another tip for the center etc.

Take a peeler and shave the 3 bars of chocolate into small shavings and place all over the sides of the cake

Place your candles on your cake and let the singing and cake eating party begin!
