Harlan Kilstein’s Completely Keto Blackberry Muffins

Ingredients:

  • 1/2 Cup + 5 Tbsp unsalted butter
  • 1 1/2 Cups Almond flour
  • 1 1/2 Cups + 2 Tbsp Swerve Sweetener (Confectioners)
  • 5 Egg whites
  • 2 Tbs Lakanto Syrup
  • Nonstick spray
  • 2 Cups blackberries
  1. Using a cupcake tray for 12 cupcakes and paper cup liners inside
  2. Simmer butter over Medium-high heat until browned a bit
  3. Mix all ingredients with your cake mixer
  4. Spray paper liner cups
  5. Fill each liner 3/4 with batter and drop 3 blackberries on top
  6. Bake at 350 for 25 minutes or until golden
  7. For the perfect muffin experience serve warm
